Pizzolato Merlot or Merlot Piave DOC “Senza Solfiti” from Cantina Pizzolato enjoys an intense dark red. It is dry, full-bodied, tannic and fruity. This merlot has floral notes of violet, distinctly fruity with aromas of blackberry. There even delicate nuances of pepper.
The vineyards are situated on the plains and hillsides near the Piave river that flows through the rich flourishing countryside in the north of Treviso. The organically grown Merlot grapes are harvested by hand late in August.
A classic red vinification process is undertaken. Fermentation occurs in contact between the skins and the must for 6-10 days in order to extract more tannins from the skins. After fermentation the liquid and any solid parts are separated. The skins are then used for Grappa to ensure that little is wasted. The wine will then refine in steel tanks before it is bottled.
Matches: great with cut meats, pasta dishes or really ripe cheese.
