Paxton AAA, Australian red wine
Paxton AAA is made in McLaren Vale, South Australia using a blend of Shiraz and Grenache organically grown grapes. Fragrant red berries, black cherry and spice leap out of the glass, followed by subtle savoury. It is a medium bodied wine with great depth of fruit structure. This is tasting wonderful now but will also develop further for another 8-10 years.
Harvested at the optimum ripeness for this wine style, the Shiraz fruit is a blend from five premium parcels of land, the Grenache from three. All were fermented separately, using both open and closed fermenters with careful monitoring. Once pressed, the wine is matured in approx. 50% American and 50% French predominantly old oak barriques for 18 months before blending.

Michael Paxton continues to strive to minimise inputs and manages the Paxton vineyards biodynamically. This is a system of farming without the use of synthetic fertilisers and pesticides. The focus is on promoting healthy, living soils through the use of natural compost preparations.
