Montchovet White or to give it its full name Montchovet Hautes Cotes de Beaune Blanc. It is a full-bodied white wine made from organically grown Chardonnay grapes. It is delicate yet there are rich aromas and a long finish, there are white truffle and smoky flavours to the wine. Superb to drink with fish, chicken or one of our favourites Comte cheese.
The type of vine, the soil and the style of wine-making make this a typical Burgundy. The Montchovet White wine is made from organically grown Chardonnay grapes – the great red variety of Burgundy. The 3.5 hectares of vines were planted between 1970 and 1990 about 4 kms from Pommard. The slopes are mainly west-facing and the soil clay limestone from the Jurassic period. The grapes are harvested manually and the wine subject to a long fermentation on the lees for 11 to 18 months. Typical of high-class wines of Burgundy, the juice is aged in oak barrels immediately after pressing. At bottling, all wines are gravity-fed so as to avoid pumping. The grower notes that the sulphur added is very moderate.
