Cascina del Melo Gavi DOCG.
Cascina del Melo Gavi is a fresh and citrusy Gavi, with some warmer fruity notes and minerality. Very drinkable on its own, but this is a dry white and well suited to seafood. The very natural way in which this Gavi is made really shows through with its intense mineral and fruit flavours. Almost green in colour its intense aroma is of elderflowers, citrus and toffee. Dry full and soft in the mouth with a delicious, vital, citrus flavour.
In the early autumn the Cortese grapes are handpicked, de-stemmed, delicately pressed and the skins removed. Temperature controlled fermentation follows using indigenous yeasts in stainless steel tank. The Gavi wines are left on their ‘lees’ for 6 months imparting flavour and finesse. At Cascina del Melo the wine is then matured for a further 3 months in tanks before finally bottled.
The La Raia vineyard, Cascina del Melo is certified as a biodynamic winery by Demeter. Set in the gentle hills of Piedmont’s Gavi wine district, it is producing some truly astonishing wines. In 2003 Giorgio Rossi Cairo bought this stunning 110 hectare estate. The estate is now run by Caterina Rossi Cairo and her English husband Tom Dean who live on the estate with their young children.
