Capofeto Grillo is light yellow in colour with brilliant greenish reflections. There are complex aromas of fresh fruit with floral notes typical of Sicilian wines. It has a really fresh clean taste with strong flavour and texture.
Cantine Europa which was established in 1962 by a group of 31 farmers produces the wine using organically grown grapes. There are now over 1,000 members covering some 1,600 hectares of vineyards. The company was set up initially to allow farmers from the surrounding area combine their strengths and to utilise one production site. This was to allow for the best technical equipment and so to produce wine of exceptional quality.
What makes this wine so special and unique is the location of the vineyards, in Sicily. They overlook the Southern Mediterranean sea and the mystical Egadi islands. The local micro climate, which can lead to dramatic temperature changes overnight, makes it possible to balance the maturity of the grape. The salinity is transmitted by the proximity of the sea. During the long hot summer days the grapes mature and help to give the wine a unique and unmistakable flavour and aroma.
No chemicals or pesticides are used when growing the organically grown Grillo grapes. After picking the grapes they are then macerated. This is done in cold stainless steel tanks for 12 hours at 16-18 degrees centigrade to get the very best from the delicious juicy flavoursome grapes.
